      You deserve this indulgence.  Go ahead and take one bite.  I won’t tell a soul.  This Chocolate Vanilla Seed Butter is sinfully good!

      But what if I told you there is nothing to be ashamed of?  Yes, licking the spoon clean is encouraged today!

      I’ve crafted this seed butter with you in mind.  A delicious and nutritious seed butter with natural cacao,  vanilla extract and is naturally sweetened with a dollop of honey.

      It’s like your favourite of chocolate bar that you can eat right out of the jar.  Minus the junk!

      But that’s not all, it’s also teaming with natural vitamins, minerals and healthy fats.  For example, pumpkin seeds alone are exceptionally high in magnesium, rich in essential fatty acids, and great source of protein and zinc.

      Mushrooms are totally delectable and I love them prepared almost any way you can imagine.  Sautéed with LOTS of garlic, baked, stuffed and of course inside a big bowl of comforting mushroom soup!

      Did you know that mushrooms are often considered medicinal? They are known to absorb and safely eliminate toxins in our bodies.  A natural blessing in today’s toxin-laden world. Some mushrooms, like relishi, are even believed to increasing longevity.  Just more reasons to chow down on some mushrooms today.

      Health benefits aside, mushrooms can also naturally enhance the flavour of your dish!  They boost the savoury element of foods they are cooked with due to the natural presence of glutamic acid.  Mushrooms are a great way to add some umami to your dish! (Umami is Japanese word that is translated as “pleasant savoury taste“).

      If you’re not sure how to get more mushrooms into your diet then consider a delicious bowl of healing soup.  I like a hot bowl teaming with mushrooms and bone broth for the base.

      Try not to be tempted by those ready-to-eat cans of mushroom soup.  They almost always contain unhealthy ingredients that should be avoided.  Ingredients like modified food starch, flavourings, soy protein concentrate, MSG and vegetable oils are anything but friendly to our bodies.  Instead, they can bog down our intricate bodies and cause negative effects.

      Homemade soup on the other hand, made with real, fresh ingredients like the ones you see below nourish our bodies and provide them with the tools to heal from the inside out.

      Recently I’ve started to use homemade bone broth as the base of my soups because it contains so many extra vitamins, minerals and proteins.  If you don’t have access to bone broth, don’t worry, you can use chicken or veggie stock and your soup will still be full of nourishing goodness.

      I use a mix of King Oyster, Cremini and Button mushrooms for a more complex taste but you could totally substitute your favourite.

      Well, you might have been wondering if I had dropped off the face of the planet.  It’s been over two months since my last post so, yeah, I guess you can say I’ve been MIA.

      Sometimes we all need to take a step back.  The world is very busy and it’s a great re-energizer to spend some time away.  I practiced being totally present in the moment and engaged with family and friends.  I also had time to collect thoughts, and let’s be honest, focus on real world stuff!

      Today I’d like to talk about the Instant Pot and share a recipe for Roasted Tomato + Carrot soup.  Have you heard of the Instant Pot? Let me say…it’s totally and completely revolutionized my time spent in the kitchen.  I’m actually quite in love with it.  I make delicious soups like this one below.  all.  the.  time.

      So what is the Instant Pot?  If you’re not familiar, it’s an electric pressure cooker that also happens to serve as a slow cooker, steamer, and yogurt maker with quick modes like soup, meat/stew, poultry, rice and porridge.  You can also sauté and brown your meat right in the pot.  I LOVE the sauté function.  Say hello to one pot meals and goodbye to additional pots and pans.  Yippee.       If you’re a parent of young children then you’re probably all too familiar with lunch packing.

      Making lunches is not as easy as it might sound!  You need to be organized, creative and always have food on hand.

      The real thorn for me was the packing.  Endless food containers and missing lids contributed to a lot of unneeded stress.  You know those mysterious house gnomes that hide your car keys and seem to eat your pairing socks?  I’m pretty sure container lids are their next favourite target.  I always end up with a ton of containers with missing lids.

      My son is only 6, so the number of containers that he has to worry about keeping track of is hard for him as well.  Not to mention opening and closing them all properly.  I’ll often open a lunch bag with yogurt everywhere because my son didn’t close a lid properly.

      I’m so thankful those days are done with the arrival of his new lunch kit from PlanetBox.  Have you heard of them?

    • Garden Fresh Pesto Pasta Recipe

      How awesome does it feel when your family is excited about having leftovers for dinner?

      It feels great to take a day off from cooking but still be able to serve up a delicious, healthy dish for dinner.  Yep, I’m totally on-board for eating leftovers.

      I made this easy pasta dish the other day and served it as a weeknight dinner.  We all enjoyed our pasta bowls but there was still enough left for another serving.  Hurray for leftovers!  My husband actually preferred it the second night after the pesto sauce had time to build up it’s flavour.

      I also love the beautiful presentation of this dish.  The bright red cherry tomatoes against the calming pea green creates a brilliant splash of contrast.

      For the pesto, I used pine nuts.  For a different flavour you could even try almonds or walnuts.  I added a bunch of fresh basil and garlic for a flavour punch.  I ended up using a whole bag of fresh sweet peas.

      I heated some sliced Prosciutto in the microwave for a few seconds to crisp it up.  My family LOVED this addition.

      You can serve this pesto over traditional, rice, or almond flour pasta.  I’m sure it would be great over paleo pasta options like zucchini noodles.  Whichever way you decided to serve it, you’re in for one tasty and wholesome meal.
