    • Are You Ready? It’s Time to Start Eating Better Every Day

      Years ago, when I started my whole foods journey, I was unaware that those little steps would lead me in a new path and ultimately change who I am today.  I would never look at food the same way again.  I would start a food blog, make all my meals from scratch,  and consume whatever information I could on healthy living.  I would end up switching to natural bath and body products.  I would also end up switching to all natural house cleaners and laundry detergent.  And that is where I am today!  A little overboard?  To some maybe.

      I’ve had my fair share of people thinking I’m a health nut because I didn’t give my child Halloween candy when he was two.  But I’m so happy with my choices.  Everyone has the right to make their own decisions in life and lead the path they wish to take.  I’m happy to say my children are flourishing.  They are happy to eat a whole foods diet because I’ve tought them the importance of food and how it impacts their health, mood and immunity system.  No one wants to be sick all the time, and the power of food to heal and protect is simply amazing.  Also, homemade treats sweetened with real honey, void of enriched wheat while using healthy fats goes along way to making little kids happy.  There’s no need for Twinkies here.

      Pre-SimplyWholeFoods, I would have a muffin and a coffee for lunch every single day.  Every single day.  All that nutrient-void wheat and overdose of caffeine was what I was using for my fuel.  I cringe a bit because I don’t think my breakfasts were any better.  The wheat was bogging down my system and causing so much unneeded stress on my digestive system.  Now I realize the importance of balanced meals.  Today, my meal would include something along the lines of: healthy greens, some protein and a good amount of healthy fat.

      I was afraid of fat back in the day.  I would consume all things low-fat.  Today, I have more knowledge and I’m all about healthy fats.  Healthy fats are simply amazing for our bodies.  I’ve seen first hand how grass-fed butter (combined with fermented cod-liver oil and a healthy diet) can work together to heal a compromised immune system. We were consuming all home-made meals with very little (if any) processed foods.  Everything works together and slowly, over time your body starts to heal itself.

      My body is starting to forgive me for eating foods that didn’t agree with it for so long.  I’m so thankful that I started on my journey those years ago.  I’m also thankful that I now have the knowledge to make informed decisions that benefit the health of myself and my family.  I’m a happier person for it.     • Savoury Breakfast Muffins Recipe

      I wasn’t planning on making these muffins.  If I remember correctly, I wasn’t in a baking mood.

      It was pretty early in the morning, but my daughter had woken up full of energy.  I felt a little tug on my arm with her cute little voice saying “let’s make muffins mommy!”   She’s lucky she’s so darn cute!

      Our kitchen was pretty much bare.  You know the feeling you get the day before grocery shopping when you swear you see tumbleweeds in your cupboards?  I really had no idea how we were going to bake muffins.

      I first thought bananas but of course we were out of those.  Apple sauce? Nope, out of that too.

      I popped my head into the fridge and found the golden ticket: leftover soup!  My Roasted Tomato + Carrot Soup from last week’s post.

      The texture was close enough to a mashed banana consistency so we went with it.

      I’m glad we did because they turned out amazingly well!  The aroma must have been pretty great as well because as soon as the muffins came out of the oven, the rest of the family began crawling out of bed.  Isn’t it interesting that they just happen to wake up right after fresh baked muffins come out of the oven?

    • Oregano Roasted Potatoes with Lemon Slices

      A tasty side dish can be as simple as roasted potatoes.  Potatoes are a cost effective, satisfying and hearty option.  They are a delicious comfort that we all love right??

      Potatoes are generally one of the most cost effective root veggies and this time of the year they are super cheap!  I just picked up a 10 lb. bag of for $1.99 CAD.

      After you scrub ’em and chop ’em, go ahead and toss ’em with your favourite herbs and a few dollops of healthy fat.  Also be sure to add a splash of citrus.  Properly salting your potatoes is they key to a delicious flavoured potato.  Some suggestions of herbs and spices include: oregano, basil, paprika, dill, turmeric, red pepper flakes.  Pick your favourite combination and sprinkle away!

      I love easy dishes like these that don’t require a ton of ingredients on hand.  Sometimes there’s just no need to over complicate things!

      These roasted potatoes come together with less than 5 ingredients and are easy peasy to make.  No need for measuring spoons because roasted potatoes are pretty forgiving.

      If you’re a parent of young children then you’re probably all too familiar with lunch packing.

      Making lunches is not as easy as it might sound!  You need to be organized, creative and always have food on hand.

      The real thorn for me was the packing.  Endless food containers and missing lids contributed to a lot of unneeded stress.  You know those mysterious house gnomes that hide your car keys and seem to eat your pairing socks?  I’m pretty sure container lids are their next favourite target.  I always end up with a ton of containers with missing lids.

      My son is only 6, so the number of containers that he has to worry about keeping track of is hard for him as well.  Not to mention opening and closing them all properly.  I’ll often open a lunch bag with yogurt everywhere because my son didn’t close a lid properly.

      I’m so thankful those days are done with the arrival of his new lunch kit from PlanetBox.  Have you heard of them?
