  • Raw Lemon Coconut Truffles Review & New Recipe: Crazy Cacao-Coconut Nut Butter Balls

    I recently came across the beautiful and inspiring site Petite-Kitchen.com and the recipe for Raw Lemon Coconut Truffles caught my eye. The recipe was simple, free of refined sugar, grain-free and full of natural whole foods ingredients.

    I used my Vita-mix to blend the few ingredients and then hand molded the resulting mixture into little balls. To finish, I rolled them in unsweetened coconut. The process almost too simple to believe the end result could be so decadent.

    I placed the mini truffles into the freezer and waited patiently.

    After 2 hours I took two truffles out. The truffles looked as if they were covered in a light dusting of fresh snow. How beautiful!

    A freshly steeped green tea combined with the cold and creamy truffle was the perfect mix. I felt like a child in a candy store. The only difference is this “candy” is so healthy and nutrient rich with no refined sugars or unnatural ingredients.

    Wide eyed and full of excitement…I took my first bite. Amazing…the truffles lasted but a few minutes.

    Can you feel my passion for clean food?! I love it.

    Raw Lemon Coconut Truffles are a treat you can actually feel good about enjoying yourself or sharing with your family. I have added this recipe to my keepers.

    I have re-visited the beautiful Petite Kitchen site to look for other great recipes and food inspiration. After reading the “My Story” tab, I was immediately connected. I will most likely become a loyal follower.

In short, she completely changed her lifestyle by adopting a simple, clean way of eating by forgoing grain, refined sugar, additives and preservatives all in the attempt to heal her daughter of severe eczema and mood fluctuations.

    Her daughter is now healthy and the issues a distant memory. I love seeing the power of a mother’s love to do what it takes to keep her babies healthy.

    The food we put into our bodies is so important. It is the fuel that keeps us going strong and gives us the required energy to balance us.

    Raw Lemon Coconut Truffles are a healthy treat great for the whole family. Perfect to serve to friends or offer up at a picnic or BBQ! In my house, they have become my end of the day, goodnight treat. Yum!

    Inspired, I wanted to create my own no-bake treats. Crazy Cacao-Coconut Nut Butter Balls are simple and yummy:

    Crazy Cacao-Coconut Nut Butter Balls

    The Ingredients:

    • 1 cup unsweetened shredded coconut
    • 3 tbsp coconut oil
    • 3 tbsp honey
    • 1 tbsp cacao or cocoa powder (I used cacao)
    • 2 tbsp nut butter of choice (I used natural peanut butter)*
    • 1 tbsp almond meal
    • 2 tbsp coconut milk

    *To make this recipe Paleo friendly simply avoid using peanut butter and go for another nut butter of choice)

    The Steps:

    • Mix all ingredients into a large bowl until combined well
    • Hand roll little balls and place on flat cookie sheet lined with parchment paper
    • Place in freezer for an hour or so until desired firmness
    • Once frozen, place into a freezer bag or glass container with lid

    Now you have a batch of delicious mini treats ready for unexpected guests, dessert or a simple mid day snack.  Just remove from the freezer and let sit for 5-15 mins until they reach desired softness.
