Spring is officially here! How I’ve missed the sunlight-filled days and warm breezy air. I don’t even mind the rain. Everyone knows that April showers bring May flowers. They must teach that in junior kindergarten because I’ve heard my son reciting it to his little sister while gazing out at a cloudy day with rain boots in hand.
With spring comes a fresh start. New buds begin to bloom and trees start to pop with beautiful green leaves. It’s a season of “new beginnings” and it inspires me to make some new resolutions, set some new goals and look forward to some great time spent outdoors in the months ahead.
I’ve decided to try a simple garden (again). While I’ve gained a lot of experience with food preparation and education in the last few years I still haven’t been terribly successful at growing my own produce. I have tried container gardens in the past with middling results. My mom has a green thumb though so I’ll certainly be hitting her up for tips this year. I’m going to keep trying though because you just can’t get a fresher vegetable than one you pick yourself from your own garden. Continue reading

I recently came across the beautiful and inspiring site Petite-Kitchen.com and the recipe for Raw Lemon Coconut Truffles caught my eye. The recipe was simple, free of refined sugar, grain-free and full of natural whole foods ingredients.
I used my Vita-mix to blend the few ingredients and then hand molded the resulting mixture into little balls. To finish, I rolled them in unsweetened coconut. The process almost too simple to believe the end result could be so decadent.
I placed the mini truffles into the freezer and waited patiently.
After 2 hours I took two truffles out. The truffles looked as if they were covered in a light dusting of fresh snow. How beautiful!
A freshly steeped green tea combined with the cold and creamy truffle was the perfect mix. I felt like a child in a candy store. The only difference is this “candy” is so healthy and nutrient rich with no refined sugars or unnatural ingredients.
Wide eyed and full of excitement…I took my first bite. Amazing…the truffles lasted but a few minutes. Continue reading

Tonight, I whipped up this gluten free and dairy free “English Muffin” from 5 ingredients and cooked it in the microwave for 2.5 minutes.
I have not had bread (or anything resembling an English Muffin) in a very long time so this is a very exciting discovery for me.
My English Muffin popped out of the glass dish and was incredibly fluffy.
I spread on some coconut oil and blueberry spread and it was absolutely delicious. It was the perfect snack to enjoy with a relaxing green tea.
I discovered the hashtag #Paleo while searching Instagram for food inspiration. I’ve known about the Paleo diet for some time but never realized all the great recipes it has to offer.
I will definitely be incorporating some of the amazing looking recipes into my diet.
Desserts, ice cream, cakes, pancakes…all wheat free and dairy free! My kind of food. Continue reading
