    I can’t believe how fast the summer went.  September is here and that means it’s time to get serious!  My son has started full-time kindergarten this year and he already has a whole week under his belt.  I prepare most of the food in the home so I’m forced to quickly get organized so that I can provide healthy breakfasts, packed lunches and weeknight dinners.  Sometimes a little routine after a busy summer doesn’t feel too bad.  But I’m still going to miss those gorgeous evenings and the warm summer breezes!

    For school I like to prepare nutrient dense meals to fill my kiddies and keep them as healthy as I can.  Sending your kid to school is a bit like putting a sponge in a petri dish.  The best thing we can do as parents is to give our kids the proper nutrition to give them a fighting chance and to help them recover from bugs quickly.  I love Autumn but the sicknesses I could certainly live without.   My son already has the sniffles today after the first week.

    One of my favourite proteins to serve my family is wild-caught salmon.  I always pick up fresh salmon if I see it for a good price.  Salmon is easy to cook, delicious and offers a powerful nutritional punch!

    I was craving something with a subtle sweetness when I decided on making this easy and delicious Sweet Maple & Berry Glazed Salmon.   The recipe was a success because my whole family loved it.  Sweet Maple & Berry Glazed Salmon would go exceptionally well with some fresh steamed greens and a light, crisp salad .

    I used strawberry spread in the recipe below but feel free to use any fruit spread that you have on hand. Blackberry, mixed berries or even apricot would be delicious.

    Sweet Maple & Berry Glazed Salmon

     Ingredients:

    • 1 tbsp coconut oil
    • 2 tbsp strawberry spread, fruit juice sweetened
    • 1 tbsp real maple syrup
    • 1/2 tsp onion powder
    • 1/4 tsp garlic powder
    • Sprinkle of mace
    • 1 tsp lime juice
    • Sea salt to taste
    • 1 pound salmon (I used wild caught sockeye salmon)

    Method:

    1. Preheat oven to 400f
    2. Combine all of the ingredients, except the salmon, into a medium bowl
    3. Place the salmon filet into a long glass baking dish and spread the glaze over all of the salmon
    4. Let the salmon rest for 20-30 minutes to bring up to room temperature
    5. Place in pre-heated oven for 20 minutes or until desired doneness
    6. Enjoy!
