    • Ok, the Instant Pot is Incredible

Posted at 9:13 am by Hollie Jeakins Photography, on March 1, 2016

      Instant Pot

Have you tried cooking with an Instant Pot yet?  Pressure cooking has quickly become the hot new kitchen method in the paleo/real whole food community and I must say it’s for very good reason.

I agree with all the rave reviews.  The Instant Pot has been my goto appliance for the majority of my meals since I got one back in December.  While I still love my other kitchen tools like my Vitamix blender, food processor and dutch oven;  I find I’m turning to my Instant Pot more and more.  It’s just so easy and gives me so much extra time that I’ll often use it multiple times daily.  Simple just works for me!

Also, the Instant Pot provides me the convenience of the slow cooker with MUCH tastier results.  My slow cooker has been hiding out in storage and I’m not sure it will ever return.  Maybe I’ll need to dust it off if I’m expecting a large crowd but time will tell if it ever gets used again.  If I’m going to be out all day, the Instant Pot still has the option to be used as a regular slow cooker.  I often find regular slow cookers change the texture of the food slightly just enough that it bothers me.  Anyone else find that?  I find there is no texture change at all when using the Instant Pot.

Since I’ve started using the Instant Pot we have been eating healthier, saving money and I’ve personally gained back a ton of time.  For example, I can make a large batch of rice or oatmeal in 3 to 4 minutes without the food ever-burning, requiring stirring or needing any attention whatsoever.

We are becoming partial to food cooked in the Instant Pot over traditionally cooked items.  Don’t get me wrong, things like roasted sweet potatoes, kale chips or a fancy prime rib roast – you’re going to always need your trusty oven for those.  BUT things like soups, stews, roasts, rice, oatmeal, meatloaf, mashed potatoes; the Instant Pot wins the round.

Here are a few of my favourite ways that we are utilizing the Instant Pot in our house to eat healthier, save money and gain back precious time. Continue reading →

    • Chocolate Vanilla Seed Butter Recipe

Posted at 2:35 am by Hollie Jeakins Photography, on February 23, 2016

You deserve this indulgence.  Go ahead and take one bite.  I won’t tell a soul.  This Chocolate Vanilla Seed Butter is sinfully good!

But what if I told you there is nothing to be ashamed of?  Yes, licking the spoon clean is encouraged today!

I’ve crafted this seed butter with you in mind.  A delicious and nutritious seed butter with natural cacao,  vanilla extract and is naturally sweetened with a dollop of honey.

It’s like your favourite of chocolate bar that you can eat right out of the jar.  Minus the junk!

But that’s not all, it’s also teaming with natural vitamins, minerals and healthy fats.  For example, pumpkin seeds alone are exceptionally high in magnesium, rich in essential fatty acids, and great source of protein and zinc.

According to Wellnessmama.com (full article here)

“Magnesium is responsible for over 300 biochemical reactions in the body and impacts blood pressure, metabolism, immune function and many other aspects of health.”

“Some experts claim that magnesium deficiency is the single largest health problem in our world today.”

Besides pumpkins seeds, this seed butter is made using real ingredients like sunflower seeds, coconut oil and cinnamon.  But you won’t find the hydrated oils and refined sugars to fake you into thinking your butter is tasty.  This seed butter uses real ingredients that have nothing to hide and simply taste amazing; naturally.

Another fantastic fact: This seed butter is completely nut free.  I let the teachers know my son has seed butter in his lunch and he’s good to go.

    • Instant Pot Mushroom Soup Recipe

Posted at 9:24 am by Hollie Jeakins Photography, on February 12, 2016

Mushrooms are totally delectable and I love them prepared almost any way you can imagine.  Sautéed with LOTS of garlic, baked, stuffed and of course inside a big bowl of comforting mushroom soup!

Did you know that mushrooms are often considered medicinal? They are known to absorb and safely eliminate toxins in our bodies.  A natural blessing in today’s toxin-laden world. Some mushrooms, like relishi, are even believed to increasing longevity.  Just more reasons to chow down on some mushrooms today.

Health benefits aside, mushrooms can also naturally enhance the flavour of your dish!  They boost the savoury element of foods they are cooked with due to the natural presence of glutamic acid.  Mushrooms are a great way to add some umami to your dish! (Umami is Japanese word that is translated as “pleasant savoury taste“).

If you’re not sure how to get more mushrooms into your diet then consider a delicious bowl of healing soup.  I like a hot bowl teaming with mushrooms and bone broth for the base.

Try not to be tempted by those ready-to-eat cans of mushroom soup.  They almost always contain unhealthy ingredients that should be avoided.  Ingredients like modified food starch, flavourings, soy protein concentrate, MSG and vegetable oils are anything but friendly to our bodies.  Instead, they can bog down our intricate bodies and cause negative effects.

Homemade soup on the other hand, made with real, fresh ingredients like the ones you see below nourish our bodies and provide them with the tools to heal from the inside out.

Recently I’ve started to use homemade bone broth as the base of my soups because it contains so many extra vitamins, minerals and proteins.  If you don’t have access to bone broth, don’t worry, you can use chicken or veggie stock and your soup will still be full of nourishing goodness.

I use a mix of King Oyster, Cremini and Button mushrooms for a more complex taste but you could totally substitute your favourite.

    • Savoury Breakfast Muffins Recipe

Posted at 1:54 pm by Hollie Jeakins Photography, on February 9, 2016

I wasn’t planning on making these muffins.  If I remember correctly, I wasn’t in a baking mood.

It was pretty early in the morning, but my daughter had woken up full of energy.  I felt a little tug on my arm with her cute little voice saying “let’s make muffins mommy!”   She’s lucky she’s so darn cute!

Our kitchen was pretty much bare.  You know the feeling you get the day before grocery shopping when you swear you see tumbleweeds in your cupboards?  I really had no idea how we were going to bake muffins.

I first thought bananas but of course we were out of those.  Apple sauce? Nope, out of that too.

I popped my head into the fridge and found the golden ticket: leftover soup!  My Roasted Tomato + Carrot Soup from last week’s post.

The texture was close enough to a mashed banana consistency so we went with it.

I’m glad we did because they turned out amazingly well!  The aroma must have been pretty great as well because as soon as the muffins came out of the oven, the rest of the family began crawling out of bed.  Isn’t it interesting that they just happen to wake up right after fresh baked muffins come out of the oven?

    • Roasted Tomato + Carrot Soup New Instant Pot Recipe

Posted at 2:02 pm by Hollie Jeakins Photography, on February 2, 2016

Roasted Tomato + Carrot Soup_20160131_0033 EditedWEB

Well, you might have been wondering if I had dropped off the face of the planet.  It’s been over two months since my last post so, yeah, I guess you can say I’ve been MIA.

Sometimes we all need to take a step back.  The world is very busy and it’s a great re-energizer to spend some time away.  I practiced being totally present in the moment and engaged with family and friends.  I also had time to collect thoughts, and let’s be honest, focus on real world stuff!

Today I’d like to talk about the Instant Pot and share a recipe for Roasted Tomato + Carrot soup.  Have you heard of the Instant Pot? Let me say…it’s totally and completely revolutionized my time spent in the kitchen.  I’m actually quite in love with it.  I make delicious soups like this one below.  all.  the.  time.

Roasted Tomato + Carrot Soup_20160201_0092 EditedWEB

So what is the Instant Pot?  If you’re not familiar, it’s an electric pressure cooker that also happens to serve as a slow cooker, steamer, and yogurt maker with quick modes like soup, meat/stew, poultry, rice and porridge.  You can also sauté and brown your meat right in the pot.  I LOVE the sauté function.  Say hello to one pot meals and goodbye to additional pots and pans.  Yippee.
