    • Garden Fresh Pesto Pasta Recipe

      How awesome does it feel when your family is excited about having leftovers for dinner?

      It feels great to take a day off from cooking but still be able to serve up a delicious, healthy dish for dinner.  Yep, I’m totally on-board for eating leftovers.

      I made this easy pasta dish the other day and served it as a weeknight dinner.  We all enjoyed our pasta bowls but there was still enough left for another serving.  Hurray for leftovers!  My husband actually preferred it the second night after the pesto sauce had time to build up it’s flavour.

      I also love the beautiful presentation of this dish.  The bright red cherry tomatoes against the calming pea green creates a brilliant splash of contrast.

      For the pesto, I used pine nuts.  For a different flavour you could even try almonds or walnuts.  I added a bunch of fresh basil and garlic for a flavour punch.  I ended up using a whole bag of fresh sweet peas.

      I heated some sliced Prosciutto in the microwave for a few seconds to crisp it up.  My family LOVED this addition.

      You can serve this pesto over traditional, rice, or almond flour pasta.  I’m sure it would be great over paleo pasta options like zucchini noodles.  Whichever way you decided to serve it, you’re in for one tasty and wholesome meal.

      In my Budget Cauliflower post, I touched on how mastering a few key skills can help greatly reduce your grocery bill while still bringing home healthy food.  Healthy food can be expensive so we need to be smart shoppers in order to feed nourishing food to ourselves and our families.  You can read the full post here which includes a delicious budget-friendly cauliflower soup recipe!

      The post was well received, so I figured I’d follow it up with some more effective ways to reduce those pesky food bills.

      The first thing you should do is figure out what things you can make from scratch.  To avoid feeling overwhelmed, I suggest choosing just one item to focus on.

      Today, let’s apply our focus on soup.  Pre-made soup can actually be pretty expensive and the prices skyrocket if you buy them from a health food store.  I realize there is super-cheap canned soup options however I wouldn’t consider them very healthy.

      Let’s tell canned soup to hit the road and welcome homemade soup into our lives.  It’s ok to say goodbye.  You’ll be surprised at how liberated you feel.  I don’t even venture down that isle anymore!

      By forgoing pre-made soups you will rid yourself of unhealthy ingredients, copious amounts of salt and be able to lower your food bill at the same time .  A win-win-win.

    • Budget Friendly Cauliflower Soup

      Preparation is the key to success.  Why not apply that golden principle to grocery shopping?

      Once you’ve mastered a few skills you will be able to greatly reduce your weekly grocery bill and still bring home healthy food in the process.

      First, you must get a general sense of what items cost.  I always try to look over the weekly flyers to get an idea of the baseline prices for each grocer.   It also keeps me in tune with how prices are adjusting for seasonal changes.  It might seem like common sense, but shop at the store with the best deals that week.

      Also, some stores promote price matching and you are missing out if you are not taking advantage of this!  You could fund a family vacation with the savings you recoup from price matching each week.  It takes a little practice, but this extra step will save you a lot of money.  I’m not ashamed to say I try to price match often.  I’ve come up with a great system that works really well and keeps me organized.  Perhaps I’ll detail it in another post!

      Sadly, healthy food can be expensive and we need to be smart shoppers in order to feed nourishing food to ourselves and our families.

    • Sweet Potato Fries with Avocado Aioli

      If there was an Oscars for food than root veggies would definitely get my vote for Best Supporting Dish.  Roasted, boiled, steamed, or bbq’d it matters not – they always get thumbs up from me.

      Strangely I never, ever get bored with sweet potatoes.

      Another great way to enjoy sweet potatoes is to serve them up fry-style.  These potatoes in my pictures are cut into fries and then baked. The spices can be easily customized (or you can simply season with sea salt).  I’m partial to this version though as the spice mixture just adds that little something extra.

      I’ve included a recipe for a creamy mayo-style dip that is egg and dairy free and packed with healthy avocado.  A tasty dip adds to the fun, right? I think so.

      Serve in a pail with some parchment paper and you will really look like you know what you’re doing.  It makes me feel like I’m at some beach burger joint (which is especially nice to think about while I sit in subzero Canadian temperatures).

    • Chocolate, Oh How I Love Thee

      Chocolate roses, chocolate squares, chocolate bark, chocolate drizzle, and of course little chocolate hearts.

      Did I mention chocolate too much?  Not nearly enough when Valentine’s Day is involved!

      Valentine’s Day and chocolate will always go hand in hand.  This year I decided to make some decadent chocolate hearts!

      Dark rich chocolate can be made with 3 ingredients.  It’s magical watching the warm honey and cacao butter blend together with the powdery cacao to create a thick & creamy liquid chocolate.

      There’s no limit to creativity when you make your own chocolate delicacies.  I used heart-shaped molds that I picked up at a thrift store and small spice bowls to create little chocolate drops.  Use whatever you have! Continue reading →
