    • Shredded Napa Salad with Lemon Dressing & Bacon

      I LOVE making different salads, slaws and veggie hashes with my food processor.  (As a side note, if you’re looking for a good food processor then I highly recommend the Breville BFP800XL.  I previously used a KitchenAid model and I much prefer this unit!)

      Along with my blender, I consider my food processor to be a mandatory appliance that has earned permanent residence on my kitchen counter (prime real estate!).  It’s good to know my hand and wrist will not suffer from the never ending chopping, mincing and shredding.  Did you know that carpal tunnel is a real risk for cooks?

      Here is the recipe for my latest salad experiment using the shredding attachment of the processor.  I find shredding the salad greens and veggies really helps my family consume greens in larger amounts without realizing it.  Sneaky! Continue reading →

    • Welcoming Spring with Whole Roasted Orange Carrots

      Spring is officially here!  How I’ve missed the sunlight-filled days and warm breezy air.  I don’t even mind the rain.  Everyone knows that April showers bring May flowers.  They must teach that in junior kindergarten because I’ve heard my son reciting it to his little sister while gazing out at a cloudy day with rain boots in hand.

      With spring comes a fresh start.  New buds begin to bloom and trees start to pop with beautiful green leaves.  It’s a season of “new beginnings” and it inspires me to make some new resolutions, set some new goals and look forward to some great time spent outdoors in the months ahead.

      I’ve decided to try a simple garden (again).  While I’ve gained a lot of experience with food preparation and education in the last few years I still haven’t been terribly successful at growing my own produce.  I have tried container gardens in the past with middling results.  My mom has a green thumb though so I’ll certainly be hitting her up for tips this year.  I’m going to keep trying though because you just can’t get a fresher vegetable than one you pick yourself from your own garden.     • The Simple Things in Life – Like Chili Rubbed Sweet Potatoes!

      Happiness to me is being surrounded by loved ones and enjoying simple pleasures.  And of course good food is usually involved in there somewhere.

      When I examine my life it really does seem to be the simple things that I enjoy and cherish the most.

      I don’t need to go out for fancy dinners too often.  I don’t need to purchase the latest gadget or have the trendiest wardrobe to be happy.  Almost the opposite really… I much prefer home-made meals.  I only purchase things when we can afford them and when I do, I try to invest in items that will last a long time.  I don’t keep up with the latest trends in fashion as the stress of seeing all that money leave my wallet each season would be too much for me!  Also, I just don’t get bored with things that fast I guess.

    • Getting Your Child Active In the Kitchen – Ideas That Really Work!

      Giggles, smiles, laughter and cute little hands working hard on building recipes with wholesome ingredients is such a beautiful thing.  My children love getting in the kitchen with their aprons on and getting their hands dirty.  I love having them there and creating great memories in the process that will last a lifetime.

      It’s important to teach your children about the benefits of homemade food and nutrition.  As they grow up, they will be bombarded with bad messages from corporations who care more about profits than about the well being of your little ones.  It’s a sad truth.

      One day my children will be older and make their own choices in life and I hope they remember some of the things I have taught them!   Although I must admit I do wish they would stay little forever.

      Hopefully the time spent together in the kitchen and around the dining room table will help influence the adults my children will one day become.  Cooking with whole ingredients, baking healthy treats and discussing food ingredients are activities that take place often in my home.  My son loves looking through cookbooks and deciding on what we should make next.

      Of course it doesn’t matter if the food turns out perfectly or has visual appeal.  Most of the time it won’t actually.  But cooking with the kids is one of those adventures where the fun is in the journey and not the destination. Continue reading →

    • Irresistible Indian Dahl Soup Bowl

      Creamy lentils, caramelized onions, garlic, cumin seeds with a burst of intense Indian flavours?  Oh yes!  How good does that sound?

      I was delighted after taking the first spoonful of dinner last night.  I really love a good soup!  I was left with a spicy tang that kept me wanting more…and more!  I must say thank you to my kitchen friends: Indian spices, fresh lemon juice and hot peppers.

      I’m actually going to cook another batch today.  I know it’s an exceptional recipe when eating the same meal two nights in a row seems like the best idea ever!

      Lentil soup is quite filling and wholly satisfying.  One bowl would definitely serve as a main dish for most people.  I didn’t need that second bowl but I’m a real sucker for Indian inspired food with some heat!

      The level of spice depends on how many hot peppers you add.  If you prefer mild, you can cut the hot peppers in half (or even leave them out).  When I reduce the hot peppers by half, the soup is mild enough for my children to eat but still has a subtle heat.
