      I’ve been making loads of soup over the past few months. Why? Because soup is a nutritional powerhouse that is simple to make and super tasty. What  a fabulous way to ensure you are getting a healthy variety of fresh veggies and also consuming healing bone broth! Yay for soup!

      This holds especially true if you’re struggling to get veggies into your child’s diet (or your own for that matter).  Some weeks are busier than others but I my aim is to always have a blended soup on hand. Each meal, I mix homemade soup with my children’s protein to ensure they’re getting ample amount of veggies, bone broth and healthy fats. I often add some tablespoons of grass fed collagen and a good blob of coconut oil before blending.

      I tend to make blended soups nice and thick and that makes it incredibly easy to incorporate into meals. When added to meats, the soup acts as a thick creamy sauce.  My kids find it easy to eat their “soup” this way and I love that they’re getting a ton of needed nutrients for their growing bodies.

      Here’s a recipe that sees heavy rotation in our house. Feel free to add more water/bone broth to create a thinner consistency.

      Over the past few months I have been putting my Instant Pot to work. I make bone broth a few times weekly and enough soup to serve daily. The time saving benefits of owning a pressure cooker are immense. Having homemade broth always on hand enables our family to have a delicious bowl of soup each night either as the main event or served as a side. Using homemade broth as the base; the basic steps are 1) sauté veggies in a healthy fat 2) add desired spices and 3) top with broth.  The average cooking time is anywhere between 6-10 minutes! I’ll often use whatever fresh ingredients I have in my fridge that day.  It’s surprising how quickly a satisfying and wholesome meal can come together.

      To make a soup into the main dish, after the soup has finished cooking, I will add in left over pastured chicken or previously cooked grass-fed beef. Any leftover protein will work. It’s also incredibly easy to drop in some fresh seafood. For seafood, you will want to gently ladle it into your hot cooked soup and utilize the simmer function. I let my seafood cook for around 5 minutes, making sure not to overcook. For items like clams, I leave in the simmering soup until the shells open.

      After your soup has finished cooking, it’s also an excellent time to add in some fresh chopped greens.  I love adding chopped kale, collard greens or watercress.  Drop your choice of greens into your soup, swirl and serve.

      By now, you’ve probably all heard the benefits of consuming homemade bone broth from pastured/grass fed bones. I have been making a huge effort to increase my broth intake (along with healthy fats, fresh greens and protein from pastured animals) to support healing.

      Consuming healing bone broth is much easier as a base for a delicious homemade soup then trying to drink a cup of it. Homemade stock adds such depth and complexity to soup. If you haven’t started making your own soups yet, today is the day.  You’ll never reach for that can of sodium laden, flavourless canned soup again.

      Today I’m sharing a mixed mushroom soup recipe. This recipe explores the different flavour profiles of three different mushrooms.  If you don’t have an Instant Pot or Pressure Cooker, there is no need to skip this recipe as you can pull out your Dutch oven or heavy bottomed pot.  Sauté all the veggies, add the spices and top with your broth and then simmer for around 20 minutes.

      If you haven’t started making your own broth yet, water can be substituted but the liquid will be missing that desired complexity that broth adds. You may be able to find a suitable broth at your local health store but be diligent to look over the ingredients carefully.

      Simply put, fresh local peaches are incredible.  I’ve been making an effort to buy my produce at local markets recently and I’m really happy about it.  It feels great to support local farmers and of course, the freshness cannot be surpassed.  Local peaches are on a whole other level.

      My son loves them and his favourite way to eat them is in my homemade take on the classic Peaches and Cream oatmeal.  Lately I’ve been preparing the oatmeal with my Instant Pot and using steel-cut oats instead of the quick cooking oats.  Peaches are in season (here in Ontario), and the Instant Pot offers such a quick and easy way to cook up oatmeal.   Here’s my adjusted recipe:

      As the world continues to become faster paced, I find myself gravitating towards simplicity.  A good part of me longs for the days before smartphones and iPads came along to overload our senses with information.  It really wasn’t that long ago and yet it feels like a lifetime.  Don’t get me wrong, I use my phone and iPad often but there is still something alluring about simpler times.

      Does anyone else share that sentiment?  Life today is plain hectic and we’ve become accessible  24/7.  Managing your social media can be a full time task in itself.  It’s not easy to balance all of our responsibilities and complete our ever-growing task lists.

      The world, however, is not going to change and it’s only going to get faster paced.  Trying to fight against the currents of change is a futile endeavour.  That said, we can still preserve the things that matter to us. Continue reading →

    • Eggplant Bolognese Sauce Instant Pot Recipe

      This sauce happens to be my favourite right now.  It’s super duper, crazy delicious!  I can’t get enough of the flavours and textures.  This sauce is super simple and quick to make which are more reasons why I LOVE it so much.  If you are vegetarian, I’d suggest replacing the ground meat with canned organic chickpeas a for a delicious twist.

      If you purchase your eggplant and ground meat on sale, this dish can be quite cost-effective.  Especially if you use it as a sauce or “topper” for another dish.

      Serving over pasta or rice would be good idea, however, I never got that far.  I taste tested the dish and then just kept eating and eating it like a bowl of chili! Next time I’ll add chunks of avocado because that would just be heavenly.

      To serve as a topper: try adding a spoonful on top of a creamy pureed soup along with some fresh avocado or as a layer of filling for lettuce tacos.  You could even roast a head or two of cauliflower (seasoned with some cumin and turmeric perhaps) then mix some of this sauce in just prior to serving.

      If you’re not an eggplant lover; don’t turn away so soon.   I feel this dish is the perfect re-introduction. Continue reading →
