    • Pumpkin and Plantain Pancakes

Posted at 9:31 am by Hollie Jeakins Photography, on October 20, 2014

      SimplyWholeFoods_PlantainPancakes

It’s tough to beat a stack of homemade pancakes!  Traditional pancake mixes will often contain LOADS of  unhealthy ingredients such as GMO’s, chemical preservatives and refined sugars.  Oh yes, and they will most certainly contain gluten which can be hard to digest for many people (myself included).

Here’s a pancake version that removes common gut irritants with yummy ingredients like plantains and pumpkin.

      SimplyWholefoods_PlantainPancakes

With 4 easy steps you can create your own fluffy, pumpkiny delicious pancakes that are fluffy on the inside and crisp on the outside with a tasty golden shell.  The best part – I’ve flavoured these babies with real pumpkin and spices to recreate that beloved pumpkin pie flavour.

These pancakes are the perfect gluten free, dairy free, nut free, egg free and Paleo friendly option for anyone with food sensitivities to wheat, grain, nuts, eggs or dairy.  You could even make them autoimmune protocol friendly by substituting a few ingredients.

Bet you can’t eat just one!  I suggest enjoying them with coconut oil, extra cinnamon and maple syrup.

Cafe lattes are often WAY overpriced and can contain many unhealthy ingredients like artificial syrup, chemical preservatives and refined sugars.

Are you looking for a more economical and healthier version?  I certainly was, so I created my own!

With 4 easy steps you can create your own fresh, creamy drinks in the comfort of your home.  The best part – you can use real ingredients, actual spices and natural sweeteners to customize your drink.

Pumpkin Spiced Lattes are my favourite.  This version uses real pumpkin, spices and creamy coconut milk that takes less than 5 minutes to make!

Pumpkin Spiced “Latte” is also a perfect gluten-free, dairy-free and Paleo-friendly drink option for anyone with food sensitivities to wheat, grain or dairy.  You can even make it autoimmune protocol friendly by omitting a few optional ingredients.

    • Reflecting with Chocolate Dipped Coconut & Fresh Fig Bites

Posted at 7:43 am by Hollie Jeakins Photography, on July 14, 2014

Do you make time for yourself each day?

When the kiddies go down, I love taking the opportunity to sit back, steep a hot tea and spend a few minutes to reflect on the day or life in general.  Life gets very busy and sometimes carving out a break is about as easy as getting toothpaste back in the tube.  But even if you only manage 5-15 minutes before there’s another matter to attend to it’s very important to make some time for yourself.  It is just so beneficial to your well-being and also your loved ones.  A happy mommy makes a happy family they say!

Refreshing your body and mind aside, it’s also easier to appreciate everything you have when you take a step back and reflect.

      SImplyWholeFoods_Sweet Pulled Pork

I love the versatility of pulled pork!  Add it to salad bowls, lettuce wraps, cauliflower rice or use as filling for your homemade taco shells. The options are endless and don’t get me started on all of the possible flavour combinations!  Ok I’m starting: Smoky BBQ, chipotle, garlicky honey mmm…sooo many delicious flavours!  I want them all.

I’m VERY pleased with how this Slow Cooker Sweet Orange Pulled Pork turned out.  I implore you, PLEASE – DO NOT SLEEP on this recipe.  After slow cooking in citrus and pure maple syrup for 6 hours the pork is falling apart and literally bursting with mouthwatering flavour. Continue reading →

    • This is Your Next Healthy Snack. Introducing Brussels Chips!

Posted at 3:23 pm by Hollie Jeakins Photography, on June 8, 2014

      SimplyWholeFoods_BrusselChips

Oh sure you might know about kale chips… but did you know about brussel chips??

Crispy, salty, bite size deliciousness… these characteristics make for some quality snacking.  I have pencilled in some quality snacking for today’s agenda and I always keep my appointments!

Next time you make some brussels sprouts, don’t toss out the outer leaves that are sometimes removed for cleaning.  Set them aside and wash them well.  These are the lovelies that will be getting crisped up with some lemon and dill.  They make an awesome healthy snack for movie night (or whatever crazy shenanigans you’re getting into tonight).  Your movie might not be great but this idea certainly gets two thumbs up.
