    Tonight, I whipped up this gluten free and dairy free “English Muffin” from 5 ingredients and cooked it in the microwave for 2.5 minutes.

    I have not had bread (or anything resembling an English Muffin) in a very long time so this is a very exciting discovery for me.

    My English Muffin popped out of the glass dish and was incredibly fluffy.

    I spread on some coconut oil and blueberry spread and it was absolutely delicious. It was the perfect snack to enjoy with a relaxing green tea.

    I discovered the hashtag #Paleo while searching Instagram for food inspiration. I’ve known about the Paleo diet for some time but never realized all the great recipes it has to offer.

    I will definitely be incorporating some of the amazing looking recipes into my diet.

    Desserts, ice cream, cakes, pancakes…all wheat free and dairy free! My kind of food.

    Coconut flour and almond flour seem to be the basis…and coconut oil. I can make almond flour with my blender and I already buy coconut oil & milk. Count me in!

    Paleo is a much-needed find for me. Whipped cream made out of canned coconut milk, frozen ice cream treats made from coconut cream, grain free pancakes made with almond meal…

    After eating my English muffin…I knew without a doubt, what I would be making for breakie tomorrow! English muffin with a side of eggs anyone?!

    Simple Paleo English Muffin

     Ingredients:

    • 3 tbsp ground almonds*
    • 1 egg
    • 1 1/2 tbsp coconut milk
    • 1/2 tsp honey
    • pinch of sea salt

    * I used my Vitamix to ground fresh whole almonds. If you don’t own a high powered blender you can buy almond meal in the baking section of the grocery store, bulk food store or a health food store.

    Steps:

    • Grease a glass Pyrex dish (the bottom of the dish should be around the size of an english muffin-I used a 2 cup round dish)
    • Place all ingredients into dish
    • Microwave for 2.5 minutes or until cooked throughout*
    • Let cool for a couple seconds. Pop English Muffin out carefully.
    • Top with your favorite spread and Enjoy!

    *I know a lot of people following a strict Paleo diet refrain from using a microwave. With my busy household and restricted diet that is one item I will have to be ok with!

      Thanks for the shout-out, Hollie! Some observations: (1) your kids are gorgeous (on the About page) (2) Your muffin picture looks AMAZING with the blueberry spread. Oh yeah – next time I’m going to cook mine in a glass loaf pan so I get more surface area so it makes a better sandwich bread. I used the ramekin once, but it was a little tall. Looking forward to exploring your recipes – bye 🙂

        Thanks so much for the kind words!!
        I use a 2 cup Pyrex circle glass dish and find that it is the perfect size. The English muffin rises well and turns out almost the same size as a store bought muffin.
        I hope you do end up trying out some of my recipes! I would love any feedback 🙂

        Hi Tara, yes, I believe this recipe should work out well using coconut flour! I tend to use almond & coconut flour interchangeably in most recipes and I’ve always had great results. If you end up making it, I’d love to hear how you make out xoxo

      have you learned over the years if using coconut vs almond flour is different? I buy both and mix them because one package of each is not a lot. A lot of my baked goods end up tasting like coconut and are not the right texture. I like coconut, but not that much – I don’t want my blueberry muffins tasting like coconuts instead of blueberries, do you know what I mean?

        I have become partial to almond flour. Partially because I find the taste to be mild and also because it is super easy to make your own. I find that coconut flour soaks up more liquid so when using it for baking you will most likely need to add more liquid to the recipe. I have had good results substituting almond flour for coconut flour in most recipes that I have tried. If you check out my Recipe Round Up post, I had great success making Lexis Clean Kitchen Chocolate Chip cookies using all almond flour and replacing the coconut flour called for in the recipe (everything else in the recipe I kept the same).

      Just a note. Almond and coconut flour are NOT replaceable 1 to 1. Coconut flour requires a lot more egg and a lot less flour. I’m not an expert but I know that recipes I’ve found have options for both. The coconut flour is usually at least half why the almond flour option would be and twice the eggs. Don’t quote me on that! I don’t know the EXACT proportions. But just saying.

        Hi Cynthia! Thanks for taking the time to leave a comment. I agree that you cannot replace almond & coconut flours 1 to 1. Like you said, it will require more liquid and/or eggs and less coconut flour. In my experience, coconut flour is like a sponge and absorbs tons of liquid! For the recipe in the above comment, the coconut flour called for was only 1 tbsp so I was able to use almond flour with no problems. I’m also not an expert on coconut flour but love to experiment in the kitchen 🙂 I also love receiving advice and feedback! Thanks again, Hollie

      This looks terrific! Do you use canned coconut milk or can I use the carton kind that is shelf stable or in the fridge section? Could I use almond milk.

        Hi Natalie, thank you! You can use the carton kind as well as almond or rice milk. I’ve made it with all three and had great success.

      absolutely love this! Came across the recipe this morning and made it straight away for breakfast! My mum really wants to try it but she doesn’t have a microwave do you think it would work in an oven?

      Hey Hollie, I just made these for my wife and kid and they thought they were great. Thank you for this recipe. I’m trying to live healthier and these recipes(many of them at least) are helping me move the needle in the right direction. The only thought I had(and I didn’t see the answer in the comments) but how would a guy bake this? 350 for like 10 minutes? Thanks for the great website!
