As yet another summer comes to an end, I’ll certainly miss the hot sun filled days, outdoor swimming and fun summer BBQs.
But those who know me will attest that autumn is my favourite season.
I’m certainly looking forward to sipping hot cocoa in my cozy, wool sweater with the crisp world outside turning shades of bright yellow, vibrant orange and scarlet red.
And yet it is still difficult to say goodbye to summer.
It’s the thought of good things to come like fall fairs, Halloween, Thanksgiving and fresh local peaches that help ease the transition.
Local peaches (here in Ontario, Canada at least) are nature’s way of saying “Summer is leaving for another year. Here is your parting gift”. I’ve decided to embrace the new beginnings of fall and of course the delicious goodness of fresh local peaches.
Peach Maple Syrup. Yes that’s what I said!
It’s great served on anything really! Pancakes, waffles, scones… once you have a taste I know you’ll be feeling the same way!
More Peach Maple Syrup please!
- 2 fresh peaches, chopped up & pits removed
- 1/4 cup pure maple syrup
- 1/8 cup water
- 1/4 tsp cinnamon
- Place all ingredients into blender
- Blend at high setting until smooth
- Pour into pan and heat gently until hot and almost bubbly (Do not let mixture boil)
- Pour over food! (pancakes are my personal fave!)
- Optional-Add fresh chopped peaches for garnish
Hopefully Peach Maple Syrup will help you with the changing seasons. I know everything is easier to accept when you have a nice full tummy! And I’ll take warm, Peach Maple Syrup any day!
