Nothing beats a summer BBQ!   Especially when the food is quick to prep and tastes amazing.   I just love being able to spend time outdoors  and eliminate the need to heat up the kitchen in the hot summer months.

While the food grills on the BBQ, the kids get important outdoor time where they get to play in the backyard and soak up some healthy Vitamin D from the sun.

If you follow me on social media sites (instagram, facebook, twitter) you have probably seen me posting outdoor pics recently.  We fixed up our deck and installed a new gate so I’m really looking forward to making some great memories in the backyard this year.

I’m currently setting up some container gardens and have ordered the parts for a raised garden as well.  I’m excited for the prospect of fresh, home-grown organic produce and herbs!   I’ll try and get some pics posted when I have the raised garden setup.  Any tips are appreciated!

Yesterday my son planted his own herb garden.  He now has a little space of his own to experiment with.  He will be in control of his little garden bed so we shall see how that goes.  I plan to hold him accountable!

Summer musings out of the way, I’ve got a super amazing recipe for you!  It’s a delicious, mouth-watering burger that will hit the spot! It’s also very simple to make, I promise.

We have made these burgers quite a few times now and my kids eat them up like there’s no tomorrow.  I’ve also used the same recipe to make a meatloaf which also went over well with the younglings.  You could try serving these burgers at your next get together and I’m sure your guests will LOVE them if they like yummy food!

This burger recipe is wheat free, dairy free and egg free so it can be enjoyed by almost everyone (well.. not including vegetarians that is).  It’s also Paleo & Auto Immune Protocol friendly.  The included greens help bind them and add some uniqueness to the patty.

    Ingredients:

    • 1 pound ground pork
    • 1 bunch carrot greens, chopped (approximately one cup)
    • 1 tbsp apple cider vinegar
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 2 tbsp minced onion (optional)
    • Himalayan pink salt to taste

    Method:

    1. Mix all the burger ingredients together, making sure not to overwork but taking care to evenly distribute the carrot greens throughout the mixture.
    2. Form four patties of equal size and flatten slightly for easy grilling.
    3. Grill on a hot grill until cooked throughout, flipping halfway through cooking.
    4. Serve with simple sides like guacamole, sautéed onions and grilled mixed veggies.

I highly recommend making this burger tonight.  It’s that good!  Grab your tools and head out to the backyard or patio!  Wait, try and leave me a comment or a ‘like’ before you go!!

    Until next time,

    Simply Hollie
