    • Paleo English Muffin Anyone?

      Tonight, I whipped up this gluten free and dairy free “English Muffin” from 5 ingredients and cooked it in the microwave for 2.5 minutes.

      I have not had bread (or anything resembling an English Muffin) in a very long time so this is a very exciting discovery for me.

      My English Muffin popped out of the glass dish and was incredibly fluffy.

      I spread on some coconut oil and blueberry spread and it was absolutely delicious. It was the perfect snack to enjoy with a relaxing green tea.

      I discovered the hashtag #Paleo while searching Instagram for food inspiration. I’ve known about the Paleo diet for some time but never realized all the great recipes it has to offer.

      I will definitely be incorporating some of the amazing looking recipes into my diet.

      Desserts, ice cream, cakes, pancakes…all wheat free and dairy free! My kind of food. Continue reading →

      Say goodbye to:

      • Bothersome ailments

      I believe, a diet rich in whole foods is the key to health, long life & age defying power.  In the door with antioxidants, vitamins and nutrients, out the door with feeling blah.

    • Strawberry Smoothie Dessert

      Strawberries.  The word alone can conjure up images and thoughts of red, vibrant, juicy sweetness.  Is there anything better than a big bowl of fresh, local, organic strawberries?

      Honestly…I can’t think of anything even close.  Summer to me equals yummy, fresh picked berries.  Lots and lots of berries.

      Last week I received 4 quarts of local, organic strawberries with my CSA share! I felt a little like Strawberry Shortcake in Strawberry Land.

      I was super excited and a tad bit worried.  How would my family consume 4 quarts of berries without letting them go bad.  Local organic berries have a very short shelf life.  A couple of days, max. Continue reading →

    • Little Power Bombs. Rustic Veggie Lentil Soup.

      Lentil love can be profound.  Rich, creamy, melt in your mouth goodness topped off with excellent nutritional value.  For lentils, I’m always in.

      Lentils can serve as the base for so many simple, healthy and cheap meals.  You can’t get much better for a high nutrition/low cost combo.  High protein, high fiber and  an excellent source of iron.  Power packed into every bite.

      What a great way to reduce your weekly intake of meat, yet not compromise on protein.  A night or two of “meat free” meals is a great way to add a little detox to your diet.  Let your body have a rest from trying to digest heavy meat.  Lentils are also wonderfully light on your wallet.  A great two-for-one deal.

      Added to soup, cooked up into a tasty Indian spiced dahl (see pic below) or added to fresh salads…the options and taste variations are endless. Continue reading →

      Say good-bye to picky eaters. Say hello to toddler tummies filled with wholesome goodness!

      Above are pictures of my four-year old son and an 18 month old daughter.  I work hard to provide food that nurtures, heals and benefits their growing bodies. They eat healthy because it really is the only option in our house.

      Even if your little one seems to hate healthy food, with patience and love you can still win your little one(s) over!  As adults, we know that healthy food is necessary to run our bodies at optimum efficiency.  Little ones on the other hand, would probably be happy with jam toast, cereal and cookies for each meal..that is a recipe for disaster and a definite no-no!
