    20130603-103037.jpg Maple Drizzled Sweet Potatoes, Oregano Roasted Potatoes with Lemon and Garlicky Button Mushrooms. Need I say more?

    I would like to share a few of my go-to and favourite side dishes, which I call, Simply Sides. I love them because they all have few ingredients, take only a minute to prep and go with almost everything. The real bonus is the oven temp and time is the same for all three dishes. Three simple sides that pair well together for taste as well as cooking convenience. Love it!

    Sweet potatoes are little nutrition powerhouses packed with the good stuff…they even say sweet potatoes can help stabilize blood sugar levels! I find that potatoes and mushrooms are great company pleasers. What’s better on a busy night than a simple side? 3 simply sides!

    Maple Drizzled Sweet Potatoes

    The Ingredients:

    • 2 large sweet potatoes
    • 1 to 2 tbsp olive oil
    • 1 to 2 tbsp real maple syrup
    • Sea salt & fresh cracked pepper

    The steps are simple and rewarding:

    1. Preheat oven to 400 f
    2. Peel sweet potatoes and chop into uniform cubes. Place in low sided baking dish.
    3. Toss sweet potato with olive oil and maple syrup to coat (adjust amount of oil and maple depending on how large your sweet potatoes are)
    4. Sprinkle with seat salt and pepper to taste
    5. Bake for 20 minutes (or until desired softness), stirring occasionally to prevent burning

    Oregano Roasted Potatoes with fresh lemon

    The Ingredients:

    • 4-5 medium-sized white potatoes
    • 2 tbsp olive oil (add more if your potatoes are fairly large-you want a nice even coating on all potatoes)
    • 1/2 lemon (optional)
    • Oregano to generously cover potatoes
    • Sea salt & fresh cracked pepper
    • Fresh lemon to squeeze over cooked potatoes

    The steps are simple and rewarding:

    1. Preheat oven to 400 f
    2. Peel potatoes and chop into uniform cubes. Place in low sided baking dish (try not to overlap potatoes)
    3. Toss potatoes with olive oil and oregano (generously sprinkle oregano to cover all sides of the potatoes)
    4. Squeeze juice of 1/2 lemon over potatoes (optional)
    5. Sprinkle with sea salt and pepper to taste
    6. Bake for 20 minutes (or until desired softness), stirring occasionally to prevent burning
    7. Squeeze fresh lemon over potatoes to serve

    Garliky Button Mushrooms

    The Ingredients:

    • 1 8oz box of button mushrooms
    • 5 garlic cloves
    • 1-2 tbsp olive oil
    • 1/2 tsp coconut oil
    • Sea salt & fresh cracked pepper

    The steps are simple and rewarding:

    1. Preheat oven to 400 f
    2. Clean mushrooms and place into deep sided baking dish
    3. Mince 3 garlic cloves and smash the remaining 2 garlic cloves
    4. Toss mushrooms with olive oil, coconut oil and garlic
    5. Sprinkle with sea salt and pepper to taste
    6. After 2-5 minutes (once coconut oil has melted) stir mushrooms distributing the oil over all mushrooms evenly
    7. Bake for 20 minutes, stirring occasionally to ensure even cooking

    Voila! Three melt in your mouth Simple Sides!!!
