    Strawberries.  The word alone can conjure up images and thoughts of red, vibrant, juicy sweetness.  Is there anything better than a big bowl of fresh, local, organic strawberries?

    Honestly…I can’t think of anything even close.  Summer to me equals yummy, fresh picked berries.  Lots and lots of berries.

    Last week I received 4 quarts of local, organic strawberries with my CSA share! I felt a little like Strawberry Shortcake in Strawberry Land.

    I was super excited and a tad bit worried.  How would my family consume 4 quarts of berries without letting them go bad.  Local organic berries have a very short shelf life.  A couple of days, max.

    I considered freezing the extra.  I washed and prepped the berries.  The following day, I was planning on freezing whatever remained to capture and retain all their greatness.

    To my surprise, we were eating the berries up like small candy or popcorn.  One, two, three…the amount left was diminishing quickly.

    In fact, I barely had enough to freeze, so instead, I made a Strawberry Smoothly Dessert.  The recipe is super simple.  Super delicious.

    • 10 fresh strawberries
    • 1/2 cup vanilla rice milk or coconut milk
    • 8 ice cubes
    • 1 tbsp agave nectar (optional)

    The steps are simple and rewarding:

    1. Clean and prepare strawberries
    2. Add all ingredients to blender*
    3. Blend on high for 1 minute or until smooth and creamy

    *I used a Vita-mixer and processed on the high setting.

    My kids loved their special strawberry treat for their after lunch “dessert.”  As did I 🙂

    Take me back to Strawberry land any day.  Please.
