    • Decadent Grain Free Chocolate Cranberry Muffins

      Have you ever wondered what to do with that leftover cranberry sauce hanging around in your fridge?  Perhaps it’s not the most common thing to ponder but it’s exactly what prompted me to make these babies.

      Fluffy and soft with hidden bursts of cranberries and gooey ‘melt-in-your-mouth’ dark chocolate.  These are a wonderful grain-free dessert option made with real whole food ingredients.  Ladies and gentlemen – feel free to indulge!

      As these muffins baked, the scent of cinnamon, cranberries and melting chocolate filled the air.  Who needs pricey scented candles?  Just bake a batch of these and let yourself be surrounded with their magical aromas!

      These are grain free, gluten-free and refined sugar-free so they make a great allergen friendly option.

      Here’s the recipe for Coconut & Carob Frozen Snow Balls from the Skinnylicious Cookbook! My instagram followers asked for it so now it’s time to deliver!

      This is the type of treat that I love to keep stashed away in my freezer for those times when you just need a treat.  It also makes a great snack for when you cuddle up with the family for your upteenth rewatch of Disney’s Frozen.   I think even Olaf would approve.

      A diet with nutrient-dense whole foods and healthy fats is the key to maintaining a healthy body weight and trimming down.   That is one of the key points that Flavia hammers home in the book and in her personal coaching sessions.   With that in mind, there is plenty of room for healthy indulgences – like these Snow Balls!

      Feel free to substitute cacao or cocoa powder for the carob powder and any nut meal would work.

      It’s tough to beat a stack of homemade pancakes!  Traditional pancake mixes will often contain LOADS of  unhealthy ingredients such as GMO’s, chemical preservatives and refined sugars.  Oh yes, and they will most certainly contain gluten which can be hard to digest for many people (myself included).

      Here’s a pancake version that removes common gut irritants with yummy ingredients like plantains and pumpkin.
