    • Savoury Breakfast Muffins Recipe

      I wasn’t planning on making these muffins.  If I remember correctly, I wasn’t in a baking mood.

      It was pretty early in the morning, but my daughter had woken up full of energy.  I felt a little tug on my arm with her cute little voice saying “let’s make muffins mommy!”   She’s lucky she’s so darn cute!

      Our kitchen was pretty much bare.  You know the feeling you get the day before grocery shopping when you swear you see tumbleweeds in your cupboards?  I really had no idea how we were going to bake muffins.

      I first thought bananas but of course we were out of those.  Apple sauce? Nope, out of that too.

      I popped my head into the fridge and found the golden ticket: leftover soup!  My Roasted Tomato + Carrot Soup from last week’s post.

      The texture was close enough to a mashed banana consistency so we went with it.

      I’m glad we did because they turned out amazingly well!  The aroma must have been pretty great as well because as soon as the muffins came out of the oven, the rest of the family began crawling out of bed.  Isn’t it interesting that they just happen to wake up right after fresh baked muffins come out of the oven?

    • Oregano Roasted Potatoes with Lemon Slices

      A tasty side dish can be as simple as roasted potatoes.  Potatoes are a cost effective, satisfying and hearty option.  They are a delicious comfort that we all love right??

      Potatoes are generally one of the most cost effective root veggies and this time of the year they are super cheap!  I just picked up a 10 lb. bag of for $1.99 CAD.

      After you scrub ’em and chop ’em, go ahead and toss ’em with your favourite herbs and a few dollops of healthy fat.  Also be sure to add a splash of citrus.  Properly salting your potatoes is they key to a delicious flavoured potato.  Some suggestions of herbs and spices include: oregano, basil, paprika, dill, turmeric, red pepper flakes.  Pick your favourite combination and sprinkle away!

      I love easy dishes like these that don’t require a ton of ingredients on hand.  Sometimes there’s just no need to over complicate things!

      These roasted potatoes come together with less than 5 ingredients and are easy peasy to make.  No need for measuring spoons because roasted potatoes are pretty forgiving.

    • Garden Fresh Pesto Pasta Recipe

      How awesome does it feel when your family is excited about having leftovers for dinner?

      It feels great to take a day off from cooking but still be able to serve up a delicious, healthy dish for dinner.  Yep, I’m totally on-board for eating leftovers.

      I made this easy pasta dish the other day and served it as a weeknight dinner.  We all enjoyed our pasta bowls but there was still enough left for another serving.  Hurray for leftovers!  My husband actually preferred it the second night after the pesto sauce had time to build up it’s flavour.

      I also love the beautiful presentation of this dish.  The bright red cherry tomatoes against the calming pea green creates a brilliant splash of contrast.

      For the pesto, I used pine nuts.  For a different flavour you could even try almonds or walnuts.  I added a bunch of fresh basil and garlic for a flavour punch.  I ended up using a whole bag of fresh sweet peas.

      I heated some sliced Prosciutto in the microwave for a few seconds to crisp it up.  My family LOVED this addition.

      You can serve this pesto over traditional, rice, or almond flour pasta.  I’m sure it would be great over paleo pasta options like zucchini noodles.  Whichever way you decided to serve it, you’re in for one tasty and wholesome meal.

      In my Budget Cauliflower post, I touched on how mastering a few key skills can help greatly reduce your grocery bill while still bringing home healthy food.  Healthy food can be expensive so we need to be smart shoppers in order to feed nourishing food to ourselves and our families.  You can read the full post here which includes a delicious budget-friendly cauliflower soup recipe!

      The post was well received, so I figured I’d follow it up with some more effective ways to reduce those pesky food bills.

      The first thing you should do is figure out what things you can make from scratch.  To avoid feeling overwhelmed, I suggest choosing just one item to focus on.

      Today, let’s apply our focus on soup.  Pre-made soup can actually be pretty expensive and the prices skyrocket if you buy them from a health food store.  I realize there is super-cheap canned soup options however I wouldn’t consider them very healthy.

      Let’s tell canned soup to hit the road and welcome homemade soup into our lives.  It’s ok to say goodbye.  You’ll be surprised at how liberated you feel.  I don’t even venture down that isle anymore!

      By forgoing pre-made soups you will rid yourself of unhealthy ingredients, copious amounts of salt and be able to lower your food bill at the same time .  A win-win-win.
