    For the longest time I was intimidated by green smoothies. I’m not sure why, but the process just seemed overwhelming.

    I was motivated, recently, by my father-in-law’s new-found love of green smoothies…and so, I found myself also creating, green, clean & simply fresh smoothies!

    It feels great to take fresh whole veggies or fruit and turn them into a smooth, creamy cup of nutrition! I actually forget I’m eating raw veggies! The best part about my Gorgeous Creamy Green Smoothie & Carrot, Cucumber, Zucchini Veggie Smoothie is that my whole family loves them.  My 16 month year old eats the smoothies with a baby spoon right out of the cup and doesn’t leave a drop behind.

    Both smoothies are loaded with veggies and happen to be dairy free, gluten-free and soy free.

    Gorgeous Creamy Green Smoothie

    The Ingredients:

    • 1/2 avocado
    • 1/2 lime (peeled)
    • 1/2 cup baby spinach
    • Small bunch celery leaves & one stalk
    • 5 inch piece cucumber
    • 1/2 banana
    • 1/2 cup vanilla rice milk (Or milk alternative of choice)

    The steps:

    • Cut up the listed ingredients into chunks your blender can handle
    • Place all wet ingredients first into blender followed by the solid ingredients (I do this so the blender has some help to get the veggies moving)
    • Process on high until smooth
    • Enjoy

    Carrot, Cucumber, Zucchini Veggie Smoothie

    The Ingredients:

    Layer 1:

    • 5 frozen banana chunks
    • 2 large carrots, cut into small chunks
    • 1/4 cup milk alternative of choice (I used coconut milk)

    Layer 2:

    • 1 large cucumber, sliced into small chunks
    • 1 small zucchini, sliced into small chunks
    • 8 frozen banana chunks
    • 1/4 cup milk alternative of choice (I used coconut milk)

    The steps:

    • Place layer 1 ingredients into the blender
    • Process on high until smooth, pour into a large glass
    • Rinse blender and place layer 2 ingredient into the blender
    • Process on high until smooth
    • Pour layer 1 and layer 2 into a serving glass, alternating layers in any order.  Get creative!
    • Enjoy

      I was surprised that the only fruits are lime and banana. A lot of green smoothies I’ve seen have a few more fruits. Anyway – I think smoothies are a great way for people to get their veggies/ fruit if they aren’t fans of eating them. 😉
