    • Irresistible Indian Dahl Soup Bowl

      Creamy lentils, caramelized onions, garlic, cumin seeds with a burst of intense Indian flavours?  Oh yes!  How good does that sound?

      I was delighted after taking the first spoonful of dinner last night.  I really love a good soup!  I was left with a spicy tang that kept me wanting more…and more!  I must say thank you to my kitchen friends: Indian spices, fresh lemon juice and hot peppers.

      I’m actually going to cook another batch today.  I know it’s an exceptional recipe when eating the same meal two nights in a row seems like the best idea ever!

      Lentil soup is quite filling and wholly satisfying.  One bowl would definitely serve as a main dish for most people.  I didn’t need that second bowl but I’m a real sucker for Indian inspired food with some heat!

      The level of spice depends on how many hot peppers you add.  If you prefer mild, you can cut the hot peppers in half (or even leave them out).  When I reduce the hot peppers by half, the soup is mild enough for my children to eat but still has a subtle heat.

      Winter can have a tendency to leave people feeling dragged down.  I often feel as if the bitter winter will never end.  On our way to school each morning my son has begun asking “When is spring going to come?”

      Spring where are you??  I’m pretty sure most of us are ready to say goodbye to Winter for another year.  Even my five year old is fed up with the cold weather and short days!

      When winter has me feeling run down (or I’m worried that I may be coming down with a bug), I often turn to a homemade tea.  Tea can be so soothing and comforting. Continue reading →

      Is there anything better than the smell of fresh-baked cookies? Aside from eating them of course! The aroma of baked nuts, melting chocolate, vanilla and sweet maple syrup combine to create the perfect harmony for the senses.  Once the oven door opens, the aroma fills the house and it won’t be long before my kids and husband start sauntering over to the kitchen.

      Everyone loves cookies!

      This school year is the first time I’ve had to send my child to school with a packed lunch.  While it may seem a simple task, it can actually be quite a challenge if you want to provide your child with healthy and yummy homemade food. Continue reading →

      Have you ever slow cooked dried beans and had them refuse to soften after hours of cooking?  I have and it’s not fun.

      I can remember more than a few occasions when that has happened to me.  However, I think I now have the proper method for cooking perfect beans and I’m happy that I will no longer have to suffer through a sub-par bean dish!

      “Most legumes range from 17 to 25% protein, roughly double the protein of grains and higher than that of eggs and most meats”.  Rebecca Wood of The New Foods Encycolpedia 

      That’s a pretty substantial source of protein!  I’ve been told that when you combine beans with whole grain rice it becomes a complete protein source for your body. Continue reading →

    • Tropical Nut Butter Bliss Smoothie

      A layered smoothie is beautiful, creative and delicious.  But is it a lot of work?

      I often get the “it doesn’t look too simple” comment from my hubby when he sees me enjoying one of my layered smoothies. The truth is that they are actually very straightforward and simple.

      Please don’t be afraid to give one a try!

      Here’s a simple breakdown of the layered smoothie process:

      • Have all your ingredients out on your counter for easy access
      • Set out two glasses.  One will be a temporary home for the first layer you process.  The other will be your designated smoothie glass.
      • Toss all the ingredients for the first layer into your blender.  Process those goodies!
      • Pour the mixture into the glass you have designated as the “temporary home” for the first layer.
      • Quickly rinse out your blender (this should only take a couple of seconds!)
      • Toss the ingredients for layer 2 into your blender,  blend away!
      • Pour this mixture directly from your blender into your smoothie glass.  Pour the other layer (previously poured into your “temporary home” glass) into your smoothie cup
      • Alternate layers (in any order) until smoothie cup is full!
      • Revel in your smoothie’s beauty!

      Practice your new smoothie layering skills with Tropical Nut Butter Bliss Smoothie. This has to be one of my favourite smoothies, hands down!  It’s really that good. Continue reading →
