    • Kids love Superhero Smoothies!

      One way that I make healthy eating enjoyable for my little ones is to make it fun (superhero kinda fun!).  It sounds simple and it is simple!!

      Every little kid (and most daddies) love superheroes, fantasy worlds and make believe.

      Why not create an avocado, spinach, green grape Yoda Smoothie?  How about a layered Zebra Smoothie using banana and coconut as one layer with dark purple grapes and cherries as a second layer?

      For some reason, Ninja Turtle Ooze Smoothie is far more desirable to a young boy then Spinach Kale Banana Avocado Smoothie.  Little does he know, the ingredients for both are the same.

    • Coconut Protein Pancakes

      As a mom of two precious toddlers and a devoted wife, I take food prep seriously.  I feel a strong sense of responsibility to provide clean food that will help my children grow into strong, healthy individuals.  I also want to live a long and healthy life with my husband by my side.

      That being said,  it’s essential that I  provide optimal food fuel for my entire family.

      I plan on traveling the world one day, with my husband by my side, drinking wine in Rome, sake in Japan and climbing the hills of Scotland (I should probably start saving now).  I need us all to be healthy for years to come!! Continue reading →

    • Tropical Kiwi Berry Bliss

      I was relaxing on a sandy beach, with the balmy salt breeze and sunny rays.  While listening to the sound of the waves splashing against the seacoast…

      In the near distance I see a glass bowl overflowing with luscious, juicy, vibrant berries.  I walk towards it…

      BUZZZZZ the alarm clock goes off and I’m staring up at my bedroom ceiling.

      No beach.

      No berries.

      It was all a dream.  A dream that ended one step away from tasting those delicious berries.  Don’t you just hate it when a good dream is cut short?

      That was when I decided I would depart on a mini-vacation.  There would be no passport, packing or destination required for this trip.  I would bring the tropics to me.  And of course the berries. Continue reading →

    • Frozen Banana Nut Butter Bites

      20130728-094212.jpgMy hubby and 4.5 year old are constantly sniffing around the kitchen in search of “treats.”

      I’m convinced that my husband sends our little guy into the kitchen on “treat” missions.  He knows I’m a sucker for my son’s little smile and sweet “please mommy” with those big blue puppy dog eyes.

      Last week, my son came upstairs searching for something to snack on.  He asked for something yummy…like a chocolate bar…”a super treat”.

      I’ve learned that coming up with tasty and healthy treats takes some creativity.  There are many healthy options that you can make from scratch that often require minimal ingredients and time.

      “Super treats” as my son likes to say!

      Say hello to Frozen Banana Nut Butter Bites.  These babies take just five minutes to make, only require 3 healthy ingredients, and most importantly  are “super treats” approved by my son and husband.

      They are similar to an ice cream chocolate nut bar (especially in a kid’s eyes) because these bites are creamy, nutty, smooth and crunchy.  The only things missing are unhealthy ingredients, loaded refined sugar, preservatives and sensitivity triggering foods!  These are items I’m extremely happy to live without.     • Raw Lemon Coconut Truffles Review & New Recipe: Crazy Cacao-Coconut Nut Butter Balls

      I recently came across the beautiful and inspiring site Petite-Kitchen.com and the recipe for Raw Lemon Coconut Truffles caught my eye. The recipe was simple, free of refined sugar, grain-free and full of natural whole foods ingredients.

      I used my Vita-mix to blend the few ingredients and then hand molded the resulting mixture into little balls. To finish, I rolled them in unsweetened coconut. The process almost too simple to believe the end result could be so decadent.

      I placed the mini truffles into the freezer and waited patiently.

      After 2 hours I took two truffles out. The truffles looked as if they were covered in a light dusting of fresh snow. How beautiful!

      A freshly steeped green tea combined with the cold and creamy truffle was the perfect mix. I felt like a child in a candy store. The only difference is this “candy” is so healthy and nutrient rich with no refined sugars or unnatural ingredients.

      Wide eyed and full of excitement…I took my first bite. Amazing…the truffles lasted but a few minutes. Continue reading →
