    • Is Healthy Eating Too Hard?

Posted at 2:19 pm by Hollie Jeakins Photography, on June 1, 2013

There seems to be a large misconception about healthy eating.

I hosted a party last night for my sister’s birthday.  My whole family came over for dinner followed by cake and coffee.  We ended up sitting around chatting for hours into the night.   Toward the end of the night, the conversation turned to “healthy eating” and the consensus seemed to be:

      1. Too hard
      2. Too expensive
      3. Too time-consuming

I sat back and took it all in.  I chose not to say anything, at that point, as I wanted to really think about what everyone had to say and defend “healthy eating” with a thought out response.

I know from experience, convincing people, healthy eating is not only achievable but can be cost efficient and straightforward (once you figure out the basics!) is not an easy task.

I love healthy eating and find that I’m very passionate about food, natural living and attaining a healthy, balanced lifestyle.  I would love to help everyone struggling with achieving their personal healthy living goals.  The one thing….super important…if not the most important factor….you truly and deeply have to want to change and be willing to push yourself beyond your comfort boundaries.

Once committed to a new way of thinking and a new life style of healthy eating, there are a few basic steps that can go along way in achieving a new lease of life! Continue reading →

    • Simply Smooth Red Pepper Hummus

Posted at 7:32 pm by Hollie Jeakins Photography, on May 31, 2013

My sister came over yesterday morning to work on wedding shower prep.  We are hosting a shower for my younger sister this Sunday.  We spent the whole day preparing, crafting, organizing, meal planning…it was a long day!

By lunch time we were in need of some serious food fuel to get us through the afternoon and continue on with the seemingly endless wedding prep!  My sister suggested hummus, and, luckily, I had canned chickpeas, garlic, and sesame seeds on hand.  They are staples in my house and happen to be the base for great hummus recipes!

I decided on a Super Smooth Red Pepper Hummus.  This recipe is super quick, tasty and perfect served alongside fresh-cut up veggies, pita, bread sticks…pretty much whatever you have on hand. Continue reading →

    • Simply Sides-Roasted Asparagus

Posted at 10:48 pm by Hollie Jeakins Photography, on May 29, 2013

Last night, I decided on a simple side of Roasted Asparagus with coconut oil, sea salt & fresh cracked pepper.  The outcome was delicious!

My 4-year-old gobbles them up in no time.  My 16 month year old follows in his footsteps and loves her “asparagus trees”.

I love Asparagus because they are so simple to serve and are such a great addition to any meal, especially, spring time meals.  I’ll take them roasted, steamed or cooked on the BBQ!! I also love that asparagus is full of antioxidants!  It’s also a very good source of fiber, folate and other beneficial vitamins.

This recipe in particular is so simple, it requires only 4 ingredients, takes minimal time in the oven and plays on the fresh, intense flavour of the beloved asparagus. Continue reading →

    • Garlic Shrimp with Sauteed Peppers, Onions & Pineapple

Whenever shrimp goes on sale, I’m in!

This week they had a 454g bag of frozen raw Zipperback shrimp on sale for $5.99 CAD which is a great deal!  I love a good deal.  In fact, I price match weekly and save approx $30.00-$40.00 per week! I’ve got price matching down to almost an art, and, can do it taking less time than someone cashing out regular groceries. After a few attempts, I quickly learned how organization is key. The savings goes to family vacations or programs for my little ones, and to me, it’s well worth the effort.

      Back to the shrimp though!

Tonight, I wanted to make something fairly simple but use up the frozen shrimp as well as the yellow and red peppers, fresh pineapple and onions all purchased with this weeks groceries.

I decided on Garlic shrimp with sauteed peppers, onions & pineapple served over basic brown rice. I always offer fresh lime as I truly believe it adds flavour to almost everything (especially seafood).

The Garlic Shrimp with sauteed peppers, onions & pineapple recipe is simple, clean tasting and quite delicious. Continue reading →
